1/4 cup Panko Breadcrumbs
3/4 cup Pecan Nuts, Pieces, Finely Chopped
1 Tbsp Fresh Parsley, Minced
1-1/2 tsp Grated Lemon Peel
1/2 tsp Minced Garlic Cloves
6 each Boneless Skinless Trout, 5 oz each
2 Tbsp Low Fat Buttermilk
1/2 tsp Kosher Salt
1/4 tsp Ground Black Pepper
Preparation
1. Mix together the panko, finely chopped pecans, minced fresh parsley, lemon zest and minced garlic. Set aside.
2. Dip fish into buttermilk and season with salt and freshly ground black pepper. Crust both sides of fish with pecan crust. Place on paper-lined pan and cook in a preheated 400F degree oven until cooked through, about 10 minutes depending on thickness. Do not overcook.
