1 Tbsp Olive Oil
2 each Skinless Boneless Chicken Breast,
4 oz Sliced thin Salted Cashew Halves
4 oz Yellow Onions, Julienne Sliced
4 oz Red Bell Peppers, Julienne Sliced
4 oz Bok Choy Cabbage, Julienne Sliced
4 oz Sugar Snap Peas, Julienne Sliced
4 each Chopped Garlic Cloves
1 Tbsp Less Sodium Soy Sauce
1 Tbsp Fresh Orange Juice
Pinch Kosher Salt
Pinch Ground Black Pepper
2 Tbsp Cilantro, Fresh, Chopped
Preparation
1. Prepare all ingredients. Heat oil in a saute pan and add chicken. Stir fry until nearly cooked. Add onion, garlic and cashews and allow to cook for a few minutes.
2. Add peppers, sugar snap peas, and bok choy. Mix together soy sauce and orange juice and add to pan. Cook chicken until cooked through. Season with salt, pepper and cilantro.
Tips & Notes
Once all the vegetables are cut, cooking takes only minutes. Serve with steamed brown rice.
